Receipe3: Mee Bakso


Date of Cooking: 14/09/2011
Time taken: 8.00 am to 8.45 am
Method of Cooking: Boiling and Stir-fry
Ingredients:-
1 packet of Ezy cook noodles/ bee hoon
4 pieces of beef meatballs
1 piece of Japanese green vegetables
1 teaspoon of chopped garlic
1/2 cube of beef stock
1/2 cube of ikan bilis stock
1 packet/bundle soup spices(sup bunjut)
1 teaspoon of pepper
1 teaspoon of ginger powder
1/2 teaspoon sugar
A pinch of salt
2 bowls of water for noodles
1 bowl for vegetables
11/2 bowl of water for soup
2 tablespoons of olive oil for boiling noodles and vegetables
2 tablespoons of vegetable oil for soup

Garnishing
Fried shallots
Sweet black sauce chili
Chili paste

How to cook:-

A) Noodles/bee hoon


-Heat 2 bowls of water with one teaspoon of olive oil in a pot.
-Put noodles/bee hoon into hot water.
- Boil for 2 minutes. Stir occasionally until cooked.

-Drained noodles/bee hoon in a sieve.
-Run noodles/bee hoon under tap water.
-Drained and put aside.

B) Vegetables:-
-Boil 1 bowl of water with 1 teaspoon of olive oil in a pot.
-Put a pinch of salt.
-When water is boiled, soaked vegetables in the water for 3 minutes.

-Drained and put aside.

C) Meatball soup:-

-Heat 2 tablespoons of vegetable oil in a pot.
-Stir fry chopped onion until fragrant.
-Put in ginger and powder.

 


-Pour 11/2 bowl of water.
-Put in beef and ikan bilis stocks, meatballs and soup spices.
-Cooked until boiled. Put half teaspoon sugar and stir until dissolved.

How to serve:-
1) Place noodles/bee hoon in a bowl.
2) Arrange vegetables on the noodles/bee hoon.
3) Scoop out meatballs and arrange on the noodles/bee hoon.
4) Pour soup to cover the noodles/bee hoon.
5) Garnish with fried shallots.
6) Serve with black chili sauce and chili paste.

Chili sauce with chili paste

Accompaniments:-
Serve the dish hot with a cup of cold water with a thin lemon slice or a hot peppermint tea.

Comments and recipe modifications:
This dish can be modified to suit the needs of an individual.
For an example;
Noodles can be substitute for bee hoon, meatballs sliced and vegetables cut small when preparing for a child or a senior citizen.
For healthier choice, bee hoon can replaced the noodles.

Recipe 2:Chinese Pancake with Sambal ikan bilis dip

Time taken: 8.00 am to 8.45 am
Method of Cooking: Frying

Ingredients:
A)Pancake Mixture:
1 teaspoon of fried fine ikan bilis
1 tablespoon of cooking oil
1 cup of plain flour
1 cup of water
a few stalks of Chives - cut thinly

B)Dip sauce
About 3 to 4 tablespoon of sambal tumis
1 tablespoon of small fried ikan bilis

Method:

-Pour flour and water into bowl. Mix well with a whisk.
-Put ikan bilis powder, oil and chives into mixture. Mix well with whisk.

-Grease pan with enough oil. Heat pan with medium heat on the stove.
-Pour 1 scoop of mixture(use a small ladle to scoop) into the frying pan.

-Fry the pancake tll slightly brown. Flip over the pancake and cook it until slightly brown.

-Place the cooked pancake onto a cutting board.
-Pour one scoop of pancake mixture into the frying pan.

-Meanwhile, use a cookie cutter of your desired design to cut the center of the pancake while it is still hot.
-Arrange the cut-out shaped around the pancake.


Dip sauce preparations:
Mix the ikan bilis with sambal well into a small bowl.
Scoop the sambal dip into the center of the pancakes.


Comments and Recipe Modifications:
1)The rdish has to be served hot.

2)Chives have to be chopped finely and ikan bilis seasoning powder is to be substitute for the real ikan bilis so that the dish texture is smoother.
The Dish can be served with accompaniments such as slices of cucumber and fried ikan bilis mixed with sambal dip and Chinese Hot Tea.

Recipe 1 : French Toast

Time taken:  8.00 am to 8.45 am
Method of Cooking : Frying

Ingredients:-
1 egg
1 tablespoon milk
2 slices of plain bread
2 teaspoons butter

Method:-
- Break egg into a small bowl, add milk and beat lightly with a fork.


- Dip plain bread in egg mixture until soaked.



- Melt butter in frying pan. Placed bread in pan.
-Cook over medium heat for a minute or until the underside is golden.


- Using an egg slice, turn bread over. Cook for about a minute more.

French toast should be served as soon as it is cooked.

Comments and Recipe Modifications:
1) French Toast can be served with drizzled honey/ golden syrup or lightly sprinkled with caster sugar.

2)The recipe will taste better if raisin bread is used as a substitute for the plain bread and 1 more tablespoon of milk is added to the egg mixture.
French toast is served best with accompaniments such as hot english breakfast tea with a slice of lemon and apple slices.
